Not only that, but a sharp knife works better, and you are not left pushing harder than you should, and trying to saw through some slab of meat, leaving you wide open for error and accidents.
I got a new butcher knife a month ago and tested it by chopping off a piece of my finger. Yep, it’s sharp. Like the Zman said, a sharp knife lessens the chances of accidents. But common sense and careful work habits help too.
When I sliced my hand from the middle of the first thumb joint to the ball of my hand, I got 13 stitches. Back surgery was super glue. I think it depends upon how much action the affected part will get.
I found Wally World had three ceramic kitchen knives, a paring knife, a 5" utility and 6" chef’s blade. I enjoyed using them so I bought a set for KId Sister. Now we swap jokes about the latest bandaid/Super glue incidents. They are very sharp.

I know that most everyone already knows this, but a sharp knife cuts cleanly. And a “clean” cut heals faster.

When I visited the ER after slicing my finger to the bone, I expected stitches. I got superglue instead.

If it’s sharp enough to perform surgery; it’s good to go in the kitchen. (However, the wife and kids refuse to wash them; too many “nicks” for them).

Finale, Clark Kent….good to know I’m not the only one who refuses to use or wash those big sharp knives, and stores them away from intruders.
