For the third year in a row, we went to a fairly nice restaurant for Thanksgiving. Much less stress. Besides, we have become few in number. Three had turkey. I had crispy duck, followed by some of the best pecan pie I’ve ever had.
I’m working by day and taking night classes. Both places had their Thanksgiving meal catered by Qudoba Mexican Grill. It’s the source for those who want a traditional Thanksgiving meal, if the pilgrims had landed in Mexico.

Yeah, me too!
But that mountain of homemade stuffing – why did I make so much?! – was too much work to throw out… yet… so, casserole it is.

Add an egg and fry it up like potato pancakes.
Mound it over a Turkey Pot Pie as the top crust.
Add some parmesan, dry mustard, and an egg, and press it into a pie pan. Bake crisp, then use it as the crust for quiche.
Add an egg (again), mix in some matzo meal, and make dumplings for soup or stew.
