Discovered, lol. Brussels sprouts, broccoli, cauliflower, asparagus, kale, and one or two other plants were actually bred from wild mustard with different end results in mind. It was early genetic engineering.
Interestingly, people with an over-abundance of taste buds (known as “super tasters”) tend to dislike cruciferous vegetables like brussels sprouts, which to them, taste bitter. (I personally enjoy them, so there is truly no accounting for taste!)

I always thought “Brussel” was a descriptor for something from Brussels. Kinda like “German” for something from Germany.
