Yum, Carmy! My hubby & I tried to eat at a Mexican restaurant yesterday. But they close between 2 & 5, and it was only 4:15, so we ended up eating pizza instead. Iâve made flour tortillas from Bisquick before, but it is much easier to buy the tortillas ready made.
Carmy, when I spent my winters down in the Rio Grande Valley, I was very disappointed in the Mexican restaurants. We had to cross the border into Mexico to get good food. I did find one gas station that served good breakfast burritos and barbacoa, but that was it. I thought it was amazing that an area that had a 95% hispanic population could not have one decent restaurant. I never did get into Brownsville except to the big flea market north of town, but I got to McAllen and all the little towns surrounding it.
Rmom, I can make flour tortillas, but I havenât in some time. I donât use Bisquick though, I make it the way my Mom taught me. Itâs been so long though, I may have to call her for a refresher course. The last time Mom was visiting, she taught my girls to make pico de gallo and tamales. I usually buy Mission flour tortillas in the small, fajita size. Theyâre actually not small, theyâre a good size.
Since weâre a family of six, going out to restaurants is too expensive.
Cleo, you have to go to the âhole in the wallâ restaurants to get some good Mexican food in the Valley, or at least thatâs my opinion. My Tia was the main cook at one place and while she was there, the food was great. After she left, the food was as yucky as it was before she worked there.
You have to be careful in the restaurants in Mexico. For instance, with cabrito, you need to be able to tell if itâs actually a goat or a dog.
Carmy - If my kids liked to eat Mexican, we couldnât go as often. But since they donât really like it that well, it isnât so expensive if we leave them at home, and it is just the two of us. Especially because I get filled up easy, so usually just order a taco or enchilada.
My Dad wasnât crazy about Mexican food, but Mom liked it. So, she didnât usually cook it. We got a Bisquick cookbook from her when we first got married, so thatâs where we learned how to make tortillas, and a good enchilada recipe.
Rmom, yes, I can see how that works well for you all. I found a good enchilada recipe on the back of an Old El Paso enchilada sauce can. Itâs an easy recipe, in fact my 14 year old just made some a few night ago. She made some with just cheese and some with beef and cheese.

D EMET, I do not know how much time you have and which provinces you will visit, but Cochrane, Ontario is where Tim Horton is from, since you are into hockey. Another cool thing is that you can take a daylong train trip North to Moosonee which is at the bottom of Hudsonâs Bay. It takes a day to go up explore and return in the evening. No roads lead to this Cree community and you see bear moose and wild territory from your train window.
LUVH8 Please forgive me for misunderstanding. The NUC COFFEE milk shake blew my mind. I mistakenly thought you were talking about âThe Incidentâ I mistakenly revealed under the Big Top last night (did I say mistakenly?). The Incident (mine) will never be discussed again, unless I fall off the wagon The DOC had a conversation with me today on the advantages of acetylene torches and NUC COFFEE. It may be of value to you in your culinary efforts, not that theyâre not top notch already.

Rmom, I couldnât cook because I didnât get a chance to get to the store. Too much was going on so we ended up getting pizza. Actually you could say we celebrated last Sunday. I made beef and chicken tacos, molĂ©, rice, beans, flour and corn tortillas. (I didnât make the tortillas, they were store bought.)

D EMET, I do not know how much time you have and which provinces you will visit, but Cochrane, Ontario is where Tim Horton is from, since you are into hockey. Another cool thing is that you can take a daylong train trip North to Moosonee which is at the bottom of Hudsonâs Bay. It takes a day to go up explore and return in the evening. No roads lead to this Cree community and you see bear moose and wild territory from your train window.

LUVH8 Please forgive me for misunderstanding. The NUC COFFEE milk shake blew my mind. I mistakenly thought you were talking about âThe Incidentâ I mistakenly revealed under the Big Top last night (did I say mistakenly?). The Incident (mine) will never be discussed again, unless I fall off the wagon The DOC had a conversation with me today on the advantages of acetylene torches and NUC COFFEE. It may be of value to you in your culinary efforts, not that theyâre not top notch already.

EMET you never answered my question, I donât think. Since you were at the Hockey Hall of Fame, did you go up to the CN Tower right next door? If you didnât you missed a FANTASTIC trip! I SOOOOO want to do that again, I thought I would freak out up there but my kids wanted to do it, and it was a thrill I will ALWAYS remember!

Oh EMET You have no idea how scared S H I T faced I was going up to the top of the TOWER! But I overcame the fear when I saw how COOL that was! That was GREAT! And the restaurant, (yea, those that know me, know I LOVE FOOD big time! Still a size 10 though, LOL!) that is up in the tower, the VIEW, the FOOD, the BAR, 5 star place, let me tell yaâ!

EMET Just caught that, failed the eye exam for the fire dept. but not the police dept.? Yes, to quote you,â Life is Odd sometimes!â Of course, back during WW2, my dad tried to get into the Army and he was turned down because he had flat feet!
