Glad to see I’m not the only person who felt the need to leap to the defense of slightly aged meatloaf. Heck, that’s one of the foods my wife and I have discussed not eating on the first day because the flavors need time to bloom.
As my fellow Ed pointed out though, if your meatloaf is bad on day one, it’s probably not going to be much better on day two.
Two easy ways to make better meatloaf:
cook it less. Many potentially great meatloves are baked until all the flavor is gone.

use more catsup. It should be baked onto the loaf

Like its distant cousin pizza, meat loaf is best eaten the following day, after a night in the fridge!
