    Fillets are a waste. Scale the fish, remove the head, and empty out the body cavity after notching out the anus. When you fry the fish enough to make the fins crunchy, you have a fun addition to the meal, and the fish does taste better cooked bone in. It does not take much effort to remove the cooked flesh from the back bone, and there isn’t as much wasted meat.

    kaecispopFillet a bluegill and you have wasted most of the meat. Bake until a straw comes out clean. Then slide the meat off the ribs and none is wasted.
