Jason: What's this? Andy: Paige told me yu had a rough day at school. So I figured what better way to cheer you up than to serve your favorite meal? I put a tofu patty in a bun just like a hamburger, I cut eggplant into strips just like french fries, and put brown rice paste in a glass with a straw just like a chocolate milkshake. Peter: Well, you've succeeded in taking my mind off school. Paige: Ok, so it's virtually your favorite meal. Jason: care for some beet soup?

The one thing I learned about cooking with healthy stuff is that it goes over much better if you don’t try so hard to make it resemble other foods. You’re just setting yourself up for failure, because your mind will not accept the discrepancy between appearance and expected taste. Case in point: Heinz with the green ketchup. Or Tofurky.
You want your kids to eat more tofu? Take up some asian cooking. Or buy the super soft stuff and substitute it for half of a measure of an ingredient in any dish (this works pretty good for italian food, things like sour cream and riccotta cheese)

GuntotingLiberal- Have to agree. My dad was proud of his garden & one nite served sliced carrots & mashed potatoes alongside mashed parsnips & we weren’t real sure about the mashed potato looking, carrot tasting stuff. Put us all off parsnips & we’ve never tried them since.
