Forgot to mention… I like smoked turkey better than roasted too. I did smoke one once and everyone liked it. However, I always make soup with the leftovers and I didn’t like how the smoke flavor made the soup taste so now I always brine and roast them.
I prefer ham too but Thanksgiving without turkey? The rest of the family wouldn’t have that! Back when the family gatherings were much larger we had both turkey and ham and my mom would make turkey noodle soup with the leftovers. That job (both the cooking of the turkey and making soup later) has fallen on me now. I’ve found that brining the turkey really makes a difference in keeping it moist and flavorful.
I agree, it was very good but all that oil? What do you do with it afterwards? It’s too expensive and wasteful to use just once. I don’t deep-fry much but if I ever do it again I’ll buy a couple of other turkeys when they go on sale after Thanksgiving, deep fry them and freeze it for making soup later. Anyway, I find when roasting it will come out just as good if it is brined first.
