    Roux is flour that is deep-fried in oil. 1:1 flour to oil plus a little more flour. Cook until the flour is the color of peanut butter, stirring constantly. IF you were making gumbo, the oil will float to the top where you can skim it off at the end. It gives the dish a nutty flavor

    We had a reel mower when I was a kid (mumbledy mumble years ago) and boy, was I happy when Dad finally broke down and got a powered reel mower, even though it was hard to start and cantankerous.If you grew up on a farm or ranch, you did a LOT more physical labor than most kids do nowadays and nobody thought it was cruel. It was just work and everyone did it. You fed the animals and swept out the barn or moved irrigation pipe or hung the clothes out to dry or cooked midday meals for the hands. You might think you were bored stiff, but it kept you out of trouble.

    Before I retired, we looked at Flag and it met most of our criteria for a permanent home, but I was uneasy about the water situation. I had lived in four states in the west where you couldn’t throw a brick without hitting a water lawyer. Also looked at Payson and Prescott but same reason. We had spent the last 10 years of my career in Houston and were wild to escape.
