Because if it’s a paper trail they will be automatically income taxed on that. If you give them $10 cash it is the equivalent of a $12 paper tip at least. If you work in a small establishment the tips might be shared with the cook etc. PS. I knew a wife that was hiding some tip cash to escape her abusive husband.
Our old original mall is now one furniture store, one urgent care corner and a whole bunch of doctors’ offices. I hate the newer mall, it was designed so you could not find your way out.
