That’s not true of the Gregorian calendar at all. It did not set up the week in its outline mandating calendars to be printed with the week starting on a Sunday. It adjusted how and when leap days be used and fixed some errors from the Julius calendar going forward. You can print Gregorian calendars starting on whatever day you want to, it’s still Gregorian.
Gregorian Calendars starting the week on a Monday are very common throughout the world.
