It’s better to cook with indirect heat, meat doesn’t get scorched from flameups and the slower cooking makes for a tastier bbq. My 2 cents.

Now is this true barbecue (low and slow cooking) or is this grilling (hot and fast) which most of us mistakenly regard as barbecuing? Or maybe smoking?
