I too would like to make some homemade bread someday, but the grocery store (yes, the one at which I’m employed) hasn’t very many flour on its shelves thanks to the pandemic and it’s going to take a while to get new shipments. Well, I’ve made cornbread in the past, but not wholemeal bread or even sourdough.

Sourdough starters can be decades old. I think I even read that there was one tracing back over 100yrs. Pretty gross.
