    In Seattle’s senior espresso bar, The Allegro, coffee with milk was called an au lait when good coffee was just getting off the ground(s) in the 70’s. We regulars looked down on the newer places used latte instead. Losing that struggle took a decade, or about the time the owner went downtown to chat with his bean supplier, Starbuck’s, about a notion of his to turn their beans & equipment stores into coffeeshops. They’d already had the notion, and hired him to run the project. [Retired as a Senior VP].
