In the seminary, every year the big deal was our Passion Play. Father David ran the holy card and holy book shop, our job was to go in and write a higher price on everything then cross it off so the curios looked to be marked down. Big job for big bucks.
Some of the stores I shop at have the tags on the shelves, but the items for the tags are nowhere near the item. I think they borrow Beryl or upper management from Adult Children to keep things going.

On ad night at our store there is a view changing tags with as many people as night crew has stocking
At least one person in every night to maintain things, it’s a big job

In CA, while some stores have price tags, if the price is posted on the shelf and the items are barcoded (UPC) there don’t have to be price tags.
