For world-class roast sweetcorn, don’t husk the ears. Leave them in their natural state (fresh picked, please!) , and put the oven as hot as it will possibly go (yes, I mean about 500 degrees F or whatever your top setting is.) Put the ears, still in their husks, in the heated oven for 20 minutes. It will steam-roast to perfection.Have paper sacks or trashbags at the table, and each eater husks their own into the bags. Just a drizzle of olive oil or butter, and salt, and you have ambrosia. Angels sing softly in the distance.
