Uck.. Enough is enough. I did what I could. I tried. I really tried. But everyone has their limits. I just can't use up all the Thanksgiving leftovers! So... Before I toss it... Do you want any turkey jerky?
Since I no longer have occasion to cook for a crowd, and I really LIKE turkey breast when properly roasted, I will return next year to roasting a whole breast about every 6 weeks – amount of time it takes for me to consume it (around 16 servings). I freeze the servings of yams and black beans separately and sometimes have the turkey in other ways (cold with just a little mayo and lots of avocado is nice, especially with a tart cranberry orange relish).
