The thing with cabbage is the same thing we got in the 70s with the “Free for the Eating” wild foods movement – people too often confuse “Edible” with “Good to Eat”.
For me, the only fitting destiny for cabbage is in a dish my Dad used to make that I still whip up now and then. A variant on the Alsatian dish choucroute garnie, it’s sauerkraut with pork and sausages.
I like cabbage as slaw and also stuffed, but my favorite is shreds cooked down to carmelized served warm with cold pain lowfat yogurt (or sour cream for those of you who still prefer that).
Our breakfast today finished with a big scoop of plain Greek yogurt on a slice of pineapple.

Well of course she’s going to make faces! I don’t like raw cabbage either. Now, cooked with bacon or made into coleslaw, that’s another story.
