Back in the sixties I was stationed in S. Korea. I developed a taste for Kimchi. I discovered that outside the cities the kimchi was put underground in big jars to keep it from spoiling. Now I can go to most Chinese Buffets and get kimchi.I’m sure each family has their secret kimchi recipe!
