When I developed an intolerance for wheat (verified by my doctors) quinoa was recommended to me as one of several grain substitutes. First few times eating it I was starting to think the cure was worse than the disease. Then I tossed out the experts cook books and experimented on my own as to how to fix it.Those who say it tastes like cardboard are eating it the way the âhealthâ experts fix it. And yeah their way DOES taste like cardboard.Fixed right, it ainât bad at all. Add spices, use chicken broth, add a little frickin salt once in a while. Donât over cook it into mushy nasty gruel. The biggest thing wrong with food in this country are the total lack of real and sensible cooking skills.
