Well, IMO they were all worth seeing once. (Just don’t tell anybody how many times I saw the first one…still a personal record for a theatrical film…ah, those were the days…)

The first one is the only movie I’ve ever actually lined up on the sidewalk to see. And the audience was so into it, everyone applauded when the Death Star blew up! (Oops, I hope I didn’t just spoil it for anyone who hasn’t seen it yet…)
