Lactose intolerance is not an issue here. Fermented cheeses—and this one is clearly that, since it contains bubbles—lose almost all their lactose. Lactose is a sugar, and ferments readily, releasing gas. Most lactose-intolerant people would have to eat a lot of this cheese to have a problem.
