    When I was a kid, Trichinosis was a big worry because pigs were raised on farms where there were rats. Pigs got Trichinosis from eating dead rats. Today pigs are raisedwhere there is no chance of eating a rat, and there has been no Trichinosis in the USA for years. The eating of pork which was forbidden years ago in various religions was believed to be related to this kind of disease and was a very good idea for the time. So you don’t have to over cook pork now. The new temperature is about 145 degrees. Love it.

    Unfortunately, in an attempt to make pork more lean, most breeders have bred all the flavor out of pork. Some of the heirloom breeds, like Berkshires, still have great taste.
