Have a heart, Penny, and teach the poor girl how to make potato soup. It’s quick, cheap, easy, has all your nutrients, and can conveniently be made for one person’s lunch.Â
Put a little water into a saucepan and set it on a burner. It should be just enough to cover the other ingredients. Keep one eye on the pan and turn the fire down to simmer when the water starts to boil.Â
Chop some celery and put it into the water. I put in the entire stick, but you might want to start with half a stick per person.Â
Scrub, pare, and cut up enough potatoes for your appetite, and put them into the pan. Smaller pieces cook faster. The soup is better with unpeeled potatoes, but peeling is easier for a beginner.
Chop a little onion. Poke a potato chunk. If it’s soft, add the onion and simmer until it turns translucent . This takes only a minute. Turn off the fire and add enough milk to cool the soup to serving temperature. If it isn’t whole milk, stir in a pat of butter before you add the milk.Â
You can start from here and make all kinds of soup. For example, you can use broth instead of water, leave out the milk, and add a little meat.
