I remember being a brand new Vocational Rehab Counselor, and having all of the worst cases dumped on me. I’m guessing that this is the idea here.

Gus would have known more about food handling and regulations than any novice inspector. Would have been like sending them to inspect Gordon Ramsay!

I used to run a restaurant. There are some REALLY weird rules you have to follow. I’ve been gigged for having a can of Comet sitting on a shelf that was a “food only” shelf, for example. I had very few violations over the years…usually just from some employee’s carelessness…like the Comet.
