In 8th Century Herefordshire, the cow would more likely be mooing in Welsh. From Welsh cows you get Welsh milk, from Welsh milk you make Welsh cheese, and from Welsh cheese you make Welsh rabbits.
American cheese isn’t too bad. It’s just cheddar with a considerably higher milk content. It has its uses, but unless you’re under 10 it’s a bad sign if it’s the only cheese you’ll eat. (n.b. When I was under 10, it was the only cheese I would eat.) Velveeta, on the other hand, is “processed” with corn oil. (OK, I also grew up eating Velveeta. So sue me. I lived in the Midwest.)
Also, Jack cheese isn’t “American cheese”, but it originated in America. Good stuff, Maynard (particularly if it’s got garlic in it).
