My son got his degree in Stage Management – it is all the technical things associated with theater: sound, lighting, props, etc. Yes you can get a degree in AV.
My son has done work from setting up the stage for presidential debates to “flying” Peter Pan (this requires a special certification).

In my grade school when is was below zero outside we would show movies in the gym and I was the AV kid
