Sliced beef tongue goes great on rye bread with Swiss cheese and mustard. And, my grandmother used to make a casserole out of rice, lamb tongues and tomato sauce that I always liked.

My parents used to enjoy boiled cow tongue. Fortunately, they never made us kids try it. It looked exactly like what it was, a tongue, complete with taste buds, sitting on the plate. And having seen live cow tongues in action every day in the barn, I had no intention of eating one!

Don’t knock tongue until you’ve tried it. Done correctly, it can be very tender.
