Now if it was angel food or deviled eggs.

I start off intending to make an omlet and messing it up, at which point it becomes a scramble.

I flip the whole thing. It takes some practice. I recommend doing over the sink the first few times.

I don’t need no stinkin omelette ….pass the OJ!

I used to doe tri-fold omelets, however, I have started getting good at making half-moon ones. I am able to stuff more goodies on the inside this way, despite the increased risk of turning it into a ‘scramble.’

Don’t count your omelette before it scrambles.

I usually end up listening to the one on the right when I am dong this.

And thus frittatas were born…
