I think the only reason people use walky-talkie mode is so that others have to listen to all of the conversation.

Not by a long shot. It’s the “pay on an iPad with minimum suggested percentages of 25% while the server gets to look over your shoulder” greedy tip-grab!

Kind of funny that we have gone back to writing to each other instead of talking.

There’s no comparison when you’ve been serving coffee and getting cigarette smoke blown in your face all day. The people aren’t even always aware when they’re doing it.
