Most people use the term “classical” to describe anything orchestral. However popular it may be, the “Star Wars” theme (or indeed the whole score) is not “classical”.

I think that technically, classical music had to be written during the classical period, in the 18th and 19th centuries. “Art music” might be a more proper term to use, although there are still issues.
