    Fried Zucchini is GREAT this way: Cut in slices, season and batter (with a touch of cayenne) as you do chicken, then deep fry until golden brown. Serve with beer during any football game.

    Actually you can do that with peas or green beens, Earl But I’d take zucchini over those two any time.

    Here’s one for you: I run it through my mandoline to make long, thin strands rather like spaghetti. Then I just toss it with a nice marinara sauce and voila! wheat-free, low-starch pseudopasta.

    I’m with Earl. I had zucchini not care much for it. Rather have peas/green beans. I don’t mind squash. Okra not fried but with stewed tomatoes.

    Yup love that zucchini. Where I live we lock our car doors only on Sunday at church, else someone will fill your car with bags of zucchini.

    Didn’t think I would find recipes in this comic, but thanks for the ideas! I had a couple of volunteers this year (perhaps the compost wasn’t as well cooked as I thought ;-) and have been enjoying the harvest!

    Never zucchinis but cucumbers should be thrown out.

    Awesome baked zucchini on alder recipe…

    sliced salt/peppered zucchini Olive oil, garlic, oregeno and thymebake 25 mins @ 400Fthrow away zucchini, eat the board

    The best way to eat zucchini is to dice it, put it in a baking dish w/olive oil or melted butter (YUM!), and sprinkle over it: chopped onion, celery, mozzarella cheese, salt, pepper. Bake at 350F for about a half hour, until topping is crispy and brown. Yum. It’s the ONLY way I can eat the stuff. Gotta hide it! ;)

    I use zucchini to make “summer apple” pie. My apples don’t ripen until late October, but you can replace the apples in pie with peeled and sliced zucchini and really can’t tell the difference.
