Cauliflower – very versatile. Oddly enough, I do not like potatoes, any way you fix them. No chips, no mashed, no fires. But give me cauliflower or give me death. Or carrots.
As for potato chips, I keep them out of the house. If I have a bag of Tim’s chips in the house, I start with one and then finish off the whole bag.HAPPY NEW YEAR’S EVERYBODY!!!
My favorite is asparagus roasted in the oven with a little olive oil and sea salt. I love all veggies except peppers of any kind. I’m also one of those wierd people who who doesn’t like tomatoes, but I love tomato sauces. No you don’t have to tell me I’m crazy, I already know.
I really enjoy all my veggies (except okra). I LOVE hearty watercress (not hydroponic), spinach, parsnips, yams, and many more that others have already mentioned. But I’ll still love them more when I can enjoy with a bit of meat and cheese!
I’m currently a reluctant vegetarian, and my current man says he’s in a countdown for Valentine’s for me (I love that it occurred to him first). We will celebrate the year of being vegetarian with some caviar and baked oysters. Meal will also include watercress stems shopped in the Greek yogurt to accompany caviar, and chopped spinach in the oysters (topped w/Reggianito).
And you folks who only want asparagus tips:Only the bottom part of the shaft (that snaps off when bent) should be thrown to the soup/mirfois.
If you think they are not going to be tender enough, just peel the shafts with a regular potato peeler- yummy! I DO love veggies, but I just love meat and cheese too.

As some already know….tomatoes!
But I love almost all vegetables.Especially the A-list…. avocados, asparagus, artichokes….
This time of year I buy brussels sprouts still on the 2 foot long stalks….
Break ’em off, trim ’em and nuke ’em… no extra water…. they come out chewy and sweet.
We’re getting beautiful skinny green beans now, too. Made those with mushrooms and butter to take to Christmas dinner.
Corn, peas….but meanwhile, as Bev warned you…..Don’t toucha me tomatoes!
