I’m always making soup… hard to pick a favorite, especially when some have no names or recipes, but result from a happy coincidence of ingredients on hand.
In winter I often make a thick chicken borscht, all from scratch….with cabbage, beets (fresh if I can get them), carrots, potatoes and tomatoes (OK, in winter those are canned), usually with other fresh vegetables too…it has lots of chicken in it, so it’s dinner in a bowl.
But I also love clear Asian style soups, with strong broth. You add soaked rice noodles to it, and fresh cilantro and basil and such.Usually I make it myself, from chicken; occasionally, I go out for a big bowl of pho, cos several pho places have opened here in recent years, and I don’t want to make a big pot of beef bone broth for one person.
Oh, Rose… funny, I was typing about pho when you said that.And yeah, I forgot about tomato soup.I love it…and tomato bisque too.
In spite of disliking most canned soup, I used to love Campbell’s Tomato soup….made with half milk and half water…till one day I discovered that the reason it was so addictive was that it had been turned into candy…the main ingredient is high fructose corn syrup…so I gave it up….sigh….
Once – the piglet a friend of ours got as a wedding-present was too cute.It had a happy life of one year, then we got a piece of it.Other than that – we never had livestock.
Favorite soup? Gee, I can’t pick just one! Everything everyone mentioned, and then there is Chicken Corn Soup, Senate Bean Soup, Italian Wedding Soup, etc. etc.
