    If they are eating potato chips, then yes, they are gluten free. If muffins, or some other wheat-based product, then no, unless it says so on the packaging.

    Wheat contains gliadin; a protein that increases the release of zonulin. Zonulin increases gut permeability; allowing molecules that should not pass into the blood stream, to enter the blood. These unwelcome, large molecules are read by the body as invaders, causing an inflammatory response as the immune system attacks them.

    An example: Someone eating wheat and then an apple, may allow large molecules from the apple to pass into the bloodstream. The body attacks these apple molecules thinking it is a bacteria or virus. The body then produces antibodies to these apple molecules. The next thing you know; every time you eat an apple, you have an immune response; or as some people would say you have an “allergy” to apples.

    No reason to eat gluten free if you don’t have CD or NCGS. But then, you would have a diagnosis and know that.
