I’ll second the Pratchett recommendation – the Discworld novels are terrific. For fantasy I’d also throw in Terry Brooks Shannara novels and the late great David & Leigh Eddings Belgariad, Mallorean, Elenium & Tamuli series.

I read one book in 7th grade and used it to do book reports in the 8th, 9th, and 10th, picking up astute reflections from the teacher’s remarks to augment the report each year. By the time I was in the 11th grade, I was a genius and the teacher said it was the best report she ever read!

I third the Pratchett recommendation. Also – nobody’s mentioned “The Hobbit” and the Lord of the Rings trilogy???

Piers Anthony’s Xanth books. There are over 30 in that series now. That should take him a while.
