^^But are they going to be asking my Mexican-American (born natural US citizen) wife for proof of status every time she goes to AZ? What are the criteria for asking to see proof of legal status?

Gee, does the law actually state if they stop you for a legal reason? In my state, if they pull you over for a traffic infraction, they may just breathalyse you. How cruel. Picking on people cause they act drunk.
