The trick to fixing a big meal is to learn how to fix each dish well - one at a time first. (Offering to bring a dish when invited somewhere else is a great way to start small. Also, it helps the hostess if she isn’t responsible for cooking everything.) Then, when you’re the host/hostess, prepare as much in advance as possible. Delegate! Have your mate or others stir, or whatever they’re capable of doing. Do you really think restaurant chefs do all the work by themselves?
Well..crap! Why didn’t I think of that years ago instead of slaving for 10 hours, spending 10 minutes eating with family, then 4 hours cleaning up alone!!?
