Sauteed zucchini and summer squash is wonderful… unless someone compares the initial fruit (if it has seeds, it’s technically a fruit) to one of the least appetizing body parts. They also go in soups and other dishes. I use a lot of them!
What to do with all those Zucchini?
Yumm! Ratatouille - my favorite end of the growing season from my garden delight:
From Epicurious which uses 4 zuchini’s & I make it with homegrown tomatoes & eggplant. Serve with Wine & some crusty home baked bread - C’est Magnifique!
I also love ratatouille, I include mushrooms, onions, garlic and strips of bell pepper, any color, with the zucchini, eggplant, and tomatoes. Near the end of baking I sprinkle with Parmesan/Romano and mozzarella.

There is a great zucchini chocolate cake recipe. It nearly disguised zucchini enough to get it past my children.

Lots to do with zucchini, I usually chop it and fry it in butter but you can put it in soups and zucchini bread.

I thought zucchinis were gourds. They told us in biology that gourds are their own classification, outside fruits or vegetables.
