I worked at the University of Miami cancer-research clinic on the medical campus for a few years. At one point they changed management of the cafeteria. The new management was using a sulfate powder to prevent the browning of lettuce in their salads. Not only did I get an asthma attack, but the new manager lied about it when I asked about it, knowing exactly why I’d get an asthma attack within a few minutes of eating a salad. And the cafeteria also provided meals to the inpatients staying overnight for their chemo treatments! It took several weeks for my loud objections and complaints to finally get an acknowledgement of the practice and get it stopped. I never could persuade them to stop trying to feed those poor patients meals like spaghetti or fried fish, which none of them could stand to smell, let alone eat.
