I guess, in spite of my rather large proboscis, I’m inured to odor of parmesan cheese. My wife, like you isn’t fond of it – I buy it hard and grate it myself, for pasta etc.She, like many others who’ve lived with me in the past, can’t stand the smell of instant penicillin – good blue cheeses. Roquefort, Gorgonzola, and Bleu de Gex are among my favorites. The delicious flavors more than compensates for the old sweat sox ( or worse , I’ve been told ) aroma.
Twice I ordered cheeses from Wisconsin to be delivered in Texas southernmost tip, 5 blocks from the Mexican border. The first time was in August and the package stood at the door all the weekend, so when it was found it was pretty bad.The second time was in January so it would be relatively fresh, and it arrived fine.Ordered some curds in different flavors to try and make poutine, and some Limburger.The curds were ok, but nothing really outstanding, could have used any cheese, really. The Limburger was something totally different, so strong smell, but once I get used to it, it was very good.
The late comedian Ed Wynn had a routine about being a waiter taking an order of Lamb Chops Au Gratin. He called out to the chef. “Cheese it the chops!” Good night folks.

I quit the “Cheese of the Month Club” years ago, once I did the math and realized how overpriced it was compared to locally available cheese.

My boyfriend used to call Parmesan cheese “stinky feet cheese” also
