It, the salmon, was cured from a ‘net’ allergy. But ended up in a ‘smoking’ wing before went to Roz’s place.
I’ve always wondered the same thing about ham.
With ’Roz’s’ cooking ‘all bets are off’ of it being cured(or cooked for that matter) ! ! ! !

Swedish lutefisk, I was told it is soaked in lye, then buried underground for 6 weeks. I hoped this was a joke, but the taste did remind me of something that was made in that way.
It had Salmonella.
