I’ve had terrific success when I’m out of ideas and have many small dishes of leftover ingredients—only when I’m alone and there’s no one to admire the perfect balance. Latest was a fry-up of cooked risotto + cooked beets, carrots, green pepper, fried fish, a little cucumber & tomato, the last thin slice of roast chicken, and herbs. The beets added a lovely color to the mix, and the taste was great.

The struggle is real. Recipes can help with this, but I rarely follow recipes. Fortunately I usually get it right, according to my guests.

Most cultures have a tradition of guests being polite to the cook, no matter what. The only real test is if they ask for “seconds”. :)
