Sorry to be pedantic, but the Colombian version of ajiaco (an absolutely delicious soup which is a cross-over between a corn chowder, a cream of three kinds of potato, and a chicken soup with pulled chicken meat, optionally topped with cream, capers, corn and avocado, and seasoned with “guascas”, an perfectly legal herb unknown to us) is from the Bogotá region, quite inland and high in the Andes. Cartagena is on the Caribbean coast. Those regions have completely different climates, cultures and gastronomy..That’s like saying “oh, you’re from Seattle? Can you give me a good recipe for gumbo?”
