I took minutes on a laptop when I got stuck with church council secretary for a term. I set up an outline with headings of the usual meeting order and just opened a new copy each meeting. Since I’m a fast typist it was relatively simple to just insert the discussion and action items. Then all I needed to do was proof for typos and print it out. I suppose today you could use voice to type but that would probably be too literal.
