You have a lot of obvious time/ temperature issues, among other things. Mark: Do you transport the food in these coolers? Gene: No, we take the dirty dishes home in those!
Would prefer a world with no regulators. Restaurant inspectors are concerned only with bizarre minutiae, stuff that has nothing to do with safety of the food.
