You have a lot of obvious time/ temperature issues, among other things. Mark: Do you transport the food in these coolers? Gene: No, we take the dirty dishes home in those!

Having had food poisoning two or three times because of restaurants not following the laws and codes, I am strongly in favor of careful inspections.

I still trust restaurants more than potlucks, though. About a year and a half ago, a local church held a potluck, and a lady brought in potatoes that she had canned herself.
She didn’t know that they had spoiled, and many fell badly ill.
One woman died. Botulism, I think.

Would prefer a world with no regulators. Restaurant inspectors are concerned only with bizarre minutiae, stuff that has nothing to do with safety of the food.

We have a friend with celiac disease. Although we always prepare something especially for her, she is so worried about cross contamination…I suppose in her position, I would be, too, but she drives me nuts.

Ask any small business owner what is killing small businesses and they’ll all tell you the same thing: government over-regulation!

“We do all our cooking in a commercial kitchen and it is inspected, we are set-up for catering you know.” If they can cater, they know how to handle food. There cannot be any time/temperature issues. They know what to do and how to do it. The over regulation can and does kill many small businesses. Inspect and approve the facilities and procedures and give them a certificate, for a small “Inspection Fee.” Then, government should go away and leave them alone. Gene and MaryLu are a shoestring operation, permitting, licenses, applications, fees, etc, can put them out of business.

The tougher standards for preparing food in restaurants the better. Today’s new political climate where there should be no government regulations is very dangerous, and indicative of leaders more concerned with pleasing businesses than watching out for the public.

“over-regulation” is an excuse used by a business that was failing or didn’t want to make the investment in doing things right in the first place

Regulation of food service is a local responsibility and should be done in a conscientious manner. Federal micro management shouldn’t exist.

I have a brother-in-law who’s always right: “We don’t need stuff like health department regulations”. And therein lies a story:
Two wedding receptions, 40 miles apart, on a 95° day. Potato salad and shrimp salad kept on ice in the first one, transported in the back of a sun-baked Expedition to the second one. “Oh, we can’t waste it, it’ll be OK.”
I won’t say that he got what was coming to him, because that would be mean. But his hubris made him and several others very, very sick, with several having to go to the hospital. Never heard if he apologized.

“Obvious time/temperature issues” means they don’t have any logs. No records means it isn’t happening as far as the health department is concerned. For good reason.

You totally ignore those who, when they go out of business for killing people, simply move elsewhere under a different name. Gene did not say those were the boxes the food came in, just that the dishes they carried back. They nest fairly easily, so carrying empty boxes in their respective directions should not be a problem. Just so each is properly cleaned after emptying. Which may be the next point of inquiry.

The same place the laws against teachers sexually abusing students going elsewhere to teach and repeat. The discussion was on the need for such food laws vs no laws at all. No laws at all are much worse protection than good laws administered only locally.
