I wouldn’t mind trying lengua in mac and cheese. (Perhaps Carmen used some strong-tasting cheese to hide the lengua’s own taste.)

yes, they do and for a vegetarian in the buffet line, it gives false hope that they might actually get something to eat.

what a load of tripe; rejecting beef tongue [used to get in NYC Kosher deli’s all the time on rye bread with a smear of horseradish and dark brown mustard] is rejecting a delicacy. What’s next rejecting steak and kidney pie? Blood pudding? All the good stuff???

One morning, just before I left to go fishing for a few hours, I carefully sliced up a freshly cooked beef Tounge. I had bought it the day before at my favorite Mexican Market. I looked forward to having it for lunch. When I got home, it was gone. My two young daughters said, “Dad, that sure was good meat, can you please get some more!”.

I thought lengua was a kind of garlic/paprika sausage.
