Not to mention making a special trip to several groceries to find the ingredients, and clean up time after the cooking. If it take longer to actively make (baking does not count – that is clean up untinsels time) than to eat, it is not made again. An elderly very proper English lady once said, if it takes more than 15 minutes in the kitchen, she does not make it. In that 15 minutes she could do a really mean curry chicken with a side order of a box of tissue. The chicken was spicy enough for the need of the tissue to wipe my eyes, but oh, was it good chicken.
I never pay attention to the prep time, and usually pre-heat the oven about halfway through my prep so that it’s not heating up the kitchen too long. I also don’t try a new recipe when I’m under time constraints.

If the list of ingredients includes words liked “peeled and diced,” those actions are not counted in the “prep time,” as far as I can tell.

Well, if you’re working with unlimited space and several assistants, the prep time is accurate. For the rest of it, quadruple it.
