    My daughter makes banana bread from the over ripe bananas. the other daughter’s husband prefers them overripe. Who knows!

    Between my wife and daughter, an over ripe banana in our house is a rarity equal an eclipse of the sun.

    They might have something producing ethylene gas in their home. That is a chemical that is released by apples ripening, but there are other sources.

    In addition to banana bread, really ripe bananas are great for smoothies. Peel, freeze them, toss them in the blender with juice, yogurt, frozen berries, flax seed..yum.

    Simpson, when I buy bananas I look at the stack of singles, and pick out four that are at various stages of ripeness. That way, each one is ready to eat when I am ready to eat it.
